When you pull the head off, if the spark plug is O.K. on the engine block side of the head, you might be able to use a drill bit to drill up through the spark plug and an easy-out to turn it out. If all (or most) of the spark plug thread had stripped, the only remaining recourse would be to try a helicoil. which may or may not help. After that, you're looking at a new cylinder head.
